Back To Basics

Today was my applesauce day!! And although it seems like the process takes forever, there is something so wonderful about seeing it all done and the jars lining the shelves (or my counter top, for the moment!!) that makes it all worth it. There’s nothing like a cool crisp day and the smell of apple butter cooking! Can’t get that feeling opening a can or jar from the store. It’s amazing how much pleasure the simple things in life bring!

Just for fun I thought I'd post the recipe for apple butter that a mom of eleven gave me. Her and her daughters taught me how to can a few years back and boy do they can. The time I helped them, I think we did like 100 quarts of applesauce and countless jars of appple butter.
Even if you don't want to tackle the canning part, try making it and storing it in your refrigerator or putting it in the freezer. It's so easy, and it taste so good on those cold winter days!!

Crockpot Apple Butter:
6 cups thin applesause
2 1/4 cup sugar
4 tsp. cinnamon
2 tsp. allspice
1 1/2 tsp. cloves

Stir all ingredients together and cook in crockpot on high for 6-8 hours. Stir about every 2 hours. Leave the lid off near the end of the cooking time, so that it will thicken a little. Process jars 10-12 minutes (the same way you would applesauce), refrigerate, or freeze. Enjoy!

I think I will can mine this year instead of freezing it. The jars look so good sitting so proudly on the counter top. Good job girl. Can't wait till' you're in my kitchen.

yeah...we were dissapointed too...my dad woke us up on sunday morn... and told us we had to be ready for church in 10 min...cuase somebody called and wanted us to come to their church...arg...we ran around like nuts...but were still 1 1/2 hours late...oh well! ;-)
